WHAT'S COOKIN'


Sauce
1-12 ounce baskets of strawberries or raspberries, cleaned and dry
½ cup sugar
2 Tablespoons dark rum
1 cinnamon stick
Fresh mint leaves for garnish
Place the sugar, rum and cinnamon stick in a small sauce pan. Over moderate heat, cook until sugar is melted and sauce starts to thicken. Do not allow to boil. Remove cinnamon stick and cool slightly.Place the sugar, rum and cinnamon stick in a small sauce pan. Over moderate heat, cook until sugar is melted and sauce starts to thicken.
Do not allow to boil. Remove cinnamon stick and cool slightly.

Arrange 1 cookie on each of 8 plates. Using a 4 inch heart shaped cookie cutter, cut out 8 custard hearts. Place 1 custard heart atop each cookie. Spoon 2 Tablespoons sauce over each heart. Set second cookie on top at a slight angle and spoon additional sauce alongside. Garnish with mint leaves and serve.
