WHAT'S COOKIN'


6 large bunches arugula, stems trimmed
2 heads romaine lettuce
French bread baguettes sections, halved lengthwise
Rye bread slices
Sourdough rolls or slices
Various mustards and mayonnaise

Allow guests to assemble their own creations.





Large Vegetable Salad
This salad can be used as a main dish or side. Any combination of vegetables, beans and meats can be added, such as garbanzos, fresh mushrooms, black and green olives, roasted red peppers, purple onion rings, string beans, cherry tomatoes, cucumbers, etc. There is no limit. As a heartier ingredient, add slices of Italian salami or strips of grilled turkey breast. Simply arrange each item in a vertical line, one next to another. Top it all with shaved, aged parmesano cheese.

Prepare a simple vinaigrette:
1 cup extra virgin olive oil
1/3 cup balsamic vinegar
1 Tablespoon Dijon mustard


Place all ingredients in a jar and shake until well blended. Chop some basil, oregano and cilantro coarsely, and toss over the entire dish. Drizzle the vinaigrette over all and serve.

A bowl of fresh fruits of the season will be a great ending, with a glass of chilled Prosecco.
