Rainbow ($10, which here has a combo of buttery white and Ahi tuna plus Salmon with Avocado & Crab), and others, (ASK TO TRY THE sweet EGG SUSHI it’s unreal) you can see prices are amazingly affordable.

They offer 7 kinds of hand-pressed Sushi in 2-piece portions. The Escolar (Super white tuna $6), was about the freshest, most buttery we ever tasted. Chef Chan also offers a 4-fish Sampler ($14) or Deluxe Sashimi Sampler ($19) with 2-pieces of each that can be shared. His Signature Rolls are as exquisite and well designed as he is happy and charming; the Gourmet Plate ($40) comes laden like a party and can easily be shared by FOUR! Tony and Jackie delight in explaining myriad rolls and plates they’re only too happy to craft for you.

We learned about a Himalayan Black rice that the duo offers with several of their rolls. The texture and taste were outrageous and if it’s possible to take this Sushi to another level, this nutty-flavored rice did. And no worries if what you want isn’t on the Nectar bar menu. Much of what they offer isn’t. Just ask. Seaweed Salad, Sashimi Salad, Soft-shell Crab roll, Tempura Shrimp roll, Edamame, Las Vegas Roll (all beyond words), and something that blew us away that we never even got the name of made with a delightfully light fish called “Ika” are not on the menu, but can be in seconds.

Nectar also has a lovely pizza menu for landlubbers and serves food daily from noon-6am (Sushi is late night only Thurs, Fri & Sat, 8pm-2am) and you can pop by late for a drink, a glass of wine, or just a munch. Their scotch and wine selections & VIP service are quite something too. Ladies nights Wed, Every Day Happy Hour 4-7pm with Half priced drinks, $2 martini specials and entertainment turn Nectar into pure pleasure. Even if you come just one time just to bask in the smile of a true artist whose passion for his profession is not just admirable, but contagious, come by. Add to the experience, personalized attention, and a quality of food usually reserved for the privileged, and inside a casino or not, you’ll be back.
